At Hostelco, Util Centre showcases a solution for producing filled pastries and chocolates in a single operation. SELMI’s Oneshot Tuttuno simultaneous depositor injects chocolate and fillings at different times and in different ways, in the exact quantities that customers require. This process simultaneously creates the outer and inner layers of each piece, with a yield of up to 150 moulds per hour.
It’s ideal for making all kinds of pastries, including chocolates in polycarbonate moulds, chocolate balls and eggs, filled langues de chat, pain au chocolate, and chocolate tiles with inclusions.
The machine features a tempering unit at the rear, which continuously feeds chocolate through a recirculation pump, while the filling is dispensed from a temperature-controlled hopper at the top. To operate, it requires a connection to an air compressor with a capacity of 80 litres per minute and a minimum pressure of 6 bar.
