    Biography

    Holds degrees in Contemporary History and Anthropology, a Master’s in Cultural Ethnography, and a PhD in Social and Cultural Anthropology. He coined “Gastropology” to examine cultural behaviors and representations in bars. Founder and president of the Sustainable Restaurants Foundation, he leads international research teams. He combines business work in the Taberna y Cafetín Barcelona group with teaching in gastronomy, hospitality, and sustainable tourism. He is a PhD candidate in Health and Psychology researching social life in bars.

    Based on the 2030 Strategy document promoted by the Spanish Ministry of Tourism together with the National Tourism Council, this roundtable analyzes the main proposals to attract, engage, retain, and train talent in HORECA. Beyond the institutional framework, the discussion will focus on the real feasibility of these action lines and the active role that the sector must take to stimulate their implementation, turn them into effective practices, and strengthen the long-term competitiveness of tourism and hospitality.
